For the Stir-Fry:

  • 8 oz lo mein noodles (or spaghetti)
  • 1 lb ground beef (lean preferred)
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated (or 1/4 tsp ground ginger)
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 2 cups shredded cabbage or coleslaw mix
  • 2 green onions, chopped (plus more for garnish)
  • 1 tablespoon vegetable or canola oil

1. Cook the Noodles

Bring a pot of water to a boil and cook noodles according to package directions. Drain and rinse under cold water to stop the cooking. Set aside.

2. Make the Sauce

In a small bowl, whisk together all the sauce ingredients. Set aside.

3. Brown the Beef

In a large skillet or wok, heat oil over medium-high heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if necessary.

4. Add Aromatics & Veggies

Stir in garlic and ginger; cook for 30 seconds until fragrant. Add carrots, bell pepper, and cabbage. Stir-fry for 3–4 minutes, or until vegetables are just tender but still crisp.

5. Combine Everything

Add the cooked noodles and sauce to the pan. Toss everything together until well coated and heated through. Stir in chopped green onions at the end.
